Target Pressure:       Beer must be maintained above freezing and below 42°F. in order to maintain proper freshness and carbonation.
The chart below gives the target CO2 pressure to be set on the regulator for various temperatures to allow 4 weeks of perfectly carbonated brewery beer. Remember that beer is best stored and served below a 43°F. keg temperature. Never set warm food on top of a keg to cool.
Never have the kegs in the constant warm air of personnal entering and leaving the cold room for food stuff.

Be sure that your system has the proper line Balance to allow these pressure settings.

DGH = Don't Go There!!! Beer will spoil above 42°F.

Is the system Balanced?
Is the beer keg internal temperature below 43°F.?
Remember that all these parameters have been worked out over several hundred years and each parameter is very important in serving a perfect draft.
